
Cottage Cheese Butterhorn Cookies

Ingredients
- 1 cup Country Fresh® cottage cheese
- 1 cup all purpose flour
- ½ cup cold butter, cut into very small cubes
- ½ cup powdered sugar
- 2 teaspoons Country Fresh® milk
- 1/4 teaspoon almond extract
- 1/4 teaspoon ground cardamom
- 1/4 cup sliced almonds
How to
- Line a rimmed baking sheet with parchment paper and preheat oven to 350 degrees.
- In a large bowl, mix cottage cheese, flour, and butter cubes with a spoon until roughly combined
- Turn dough out on a lightly floured surface and use your hands to work dough together into a more cohesive mass, then work it to form a flat, 1-inch-thick disk
- Cover with plastic wrap and refrigerate 30 minutes
- Using a rolling pin on a lightly floured surface, roll dough into a 1/8″ thick circle about 10-12 inches in diameter
- Cut the dough circle into quarters, then cut each quarter into four smaller triangles
- Roll each small triangle into a crescent, starting at the widest part
- Place each crescent on prepared baking sheet, seam side down
- Bake 22-25 minutes until lightly golden brown
- While butterhorns cool, make glaze by whisking together powdered sugar, milk, almond extract, and cardamom
- Add a little more milk to loosen if necessary to get a drizzleable consistency
- Once mostly cooled, drizzle butterhorns with cardamom almond glaze, sprinkle with sliced almonds, and enjoy immediately
