Cottage Cheese Butterhorn Cookies

Ingredients

  • 1 cup Country Fresh® cottage cheese
  • 1 cup all purpose flour
  • ½ cup cold butter, cut into very small cubes
  • ½ cup powdered sugar
  • 2 teaspoons Country Fresh® milk
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon ground cardamom
  • 1/4 cup sliced almonds

How to

  1. Line a rimmed baking sheet with parchment paper and preheat oven to 350 degrees.
  2. In a large bowl, mix cottage cheese, flour, and butter cubes with a spoon until roughly combined
  3. Turn dough out on a lightly floured surface and use your hands to work dough together into a more cohesive mass, then work it to form a flat, 1-inch-thick disk
  4. Cover with plastic wrap and refrigerate 30 minutes
  5. Using a rolling pin on a lightly floured surface, roll dough into a 1/8″ thick circle about 10-12 inches in diameter
  6. Cut the dough circle into quarters, then cut each quarter into four smaller triangles
  7. Roll each small triangle into a crescent, starting at the widest part
  8. Place each crescent on prepared baking sheet, seam side down
  9. Bake 22-25 minutes until lightly golden brown
  10. While butterhorns cool, make glaze by whisking together powdered sugar, milk, almond extract, and cardamom
  11. Add a little more milk to loosen if necessary to get a drizzleable consistency
  12. Once mostly cooled, drizzle butterhorns with cardamom almond glaze, sprinkle with sliced almonds, and enjoy immediately
